Choc mint coconut cups.
I got a lot of requests for this no bake recipe. However this treat is only suitable in winter otherwise it needs to be keep chilled. I think I found this recipe on #fastpaleo. FILLING
*Melt 1 cup of raw organic coconut oil in a pan.
*combine 2 cups of flaked/shredded unsweetened organic coconut and 2 tablespoons of raw organic honey.
*add a few drops of organic mint oil/extract
*stir until combined
*divide evenly into a muffin tin 1cm-2cm
*place in freezer to set, at least 30 min, once they have set pop them out the tin an keep them chilled
*melt 1cup of coconut oil on a low heat
*once melted stir 1 cup of raw organ cacao powder and 1 tablespoon of raw honey.
*fill each muffin cup with 2 table spoons of chocolate
*get you coconut filling and place them on top of the chocolate pressing them down gently, the chocolate should come up the side and spill over
*take the rest of your chocolate and distribute it on top :)
*put in the the freezer to set
*keep in the freezer and fridge for the perfect treat day treat ! They are so Devine and I love them because they have minimal honey. You can use coconut sugar if you like. Enjoy and don’t eat them all at once :p

So we road tripping. Where I come from you eat lots of yummy (rubbish) when you road trip. So in order to avoid all that refined sugar and dairy I decide to take 2 hours of my day and prepare healthy alternatives for our long weekend road trip. These are all proper paleo. The cake is a coconut base cake, the cookies I like because the sweetener in them is a banana, they also have almond butter in them, Raw honey and pecan nuts. The chocolate cups you see are like a coconut ice chocolate cup, coconut, coconut oil, raw honey and raw cacao powder. It cost a small fortune but I’m glad I have these just in case we stop at a quick shop and the Cadbury whole nut says “buy me”.

So I started a food diary
Here is why…
I’ve been injured since the end of the open, so that’s the 7th of April. My training went down hill and when something goes downhill in my life, it’s like dominos, everything starts tilting and eventually end up going downhill at the same time.
I couldn’t train properly, work wise trying to start a company in a new city was challenging and my eating was all over the place. Here is the thing, I say all over the place but in some people’s terms I was still eating healthy. I love cheese cake and chocolate and toffee. Those have Been vices! My diet has been unbalanced.
That’s why I have decided to do almost paleo but in zone blocks and to do the food dairy. It’s for me to keep track and stay disciplined. I will be slightly mortified if I had to load cheese cake on there. I will have the odd paleo treat to keep me sane, after all I am human. I will also share whatever yummy recipes I come across.
